Pumpkin Soup

I finally made pumpkin soup for Jack yesterday. Here is the recipe I used:

Savory & Creamy Pumpkin Soup (8 months)
Ingredients:
2 cups of pumpkin(canned or fresh pureed)
1 3/4 cups chicken broth or veggie broth
1 small onion, finely diced
2 carrots, peeled and finely diced
2 cups half and half or evaporated milk (if you want to indulge) – use plain whole milk yogurt for the little ones
1/4 cup Sour Cream (optional)
dash of pepper
dash of cinnamon
dash of nutmeg
Directions:
1. In a large pot add the broth, onions, carrot, and spices.
2. Simmer uncovered for ten to fifteen minutes until carrots are soft.
Optional: Put vegetables and broth into a food processor or blender and blend until smooth. Return to pot.
3. Add pumpkin and half and half or yogurt. Simmer uncovered for 10 minutes.
Serve warm, topped with with sour cream (optional)
Ideas for the babies:  Blend into rice, blend with chicken or pork or serve as a “sauce” over pasta

I didn't use carrots because I didn't have any and Jack hates them. I did use low sodium vegetable broth and whole milk yogurt. I also think I had way too much onion! Overall it turned out good though. It also made a ton!

I let Jack try a few spoonfuls after it was done and cooled off. He seemed to like it well enough. Tonight, I put it over some pasta which he has never had before. I can't tell whether or not he liked it. He didn't hate it, but he wasn't eager for more and didn't finish all of it. He shook his head no (which he sometimes does out of excitement) and actually turned his head away and wouldn't take the food. It might have been because he was tired or it was just too many new things at once. I gave him a few pieces of plain pasta on his tray, which he ate most of, and then I put the bowl of pasta with the soup in front of him. He was reluctant to put his hand in the bowl and when he touched it, he took his hand back without grabbing anything. It was weird! I tried to feed him with both my finger and the spoon, and he just wasn't that into it. He was more interested in the bowl than anything else! I'll have to try some pasta by itself tomorrow night and see how he does. He seemed to like the soup by itself though and I'll find out tomorrow whether or not he'll eat an entire serving.

Hopefully he likes the soup because I have 18 servings! I'm surprised he wasn't more into the pasta, but it is different from anything else he's had so he might just need some time to get used to it.

I hope everyone had a great weekend. Jack and I had a terrific day today just relaxing and playing. It was exactly what I needed! I feel like I spend my weekends out running errands, cleaning, and cooking. Before I know it, the weekend is over and I don't feel like I've spent any quality time with Jack. I made sure to get all my stuff done yesterday and today we were able to just relax. It was awesome! It's hard being a full-time working mom and 10 1/2 months into it, I'm still trying to find a good balance. Jack makes it all worth it though!

Ethan didnt like pasta the first time I gve it to him either. I gave it to him plain though and I think it was sticky and wierd. I gave him spaghetti last week with the sauce and he LOVED it! I think Jack will like it once he gets used to it.

Glad you got to spend good time with Jack yesterday. :)

Yum! That looks tasty! I can't wait for A to outgrow this pesky allergy!

I give A whole wheat rotini pasta, and she loves it! Maybe because of the texture/shape, or maybe because the whole wheat is bound a little more solid? Just an idea :)
