Lentil Chili

I found a recipe from Whole Foods for lentil chili that I want to share. I made it yesterday and it was delicious! Jack and I both gobbled down a whole bowl full. It was extremely easy to make and I have enough for the whole week. The best part? It's also really healthy! And for those who can't have dairy, you're in luck! It's dairy free, fat free and vegan.
Here's the recipe:

Ingredients:
8 cups low-sodium vegetable broth, divided (I used 5 cups of regular vegetable broth and 3 cups water)
1 medium yellow onion, chopped
1 large red bell pepper, chopped
5 cloves garlic, finely chopped
4 teaspoons salt-free chili powder (I couldn't find salt-free so I used regular)
1 (16-ounce) package brown lentils (about 2 1/4 cups lentils)
2 (15-ounce) cans no-salt-added diced tomatoes (Del Monte makes a no-salt-added variety)
1/4 cup chopped cilantro (I left this out as I hate cilantro)

Method:
Bring 3/4 cup broth to a simmer in a large pot over medium-high heat. Add onion, bell pepper and garlic and cook about 8 minutes or until onion is translucent and pepper is tender. Stir in chili powder and cook 1 minute, stirring constantly. Add lentils, tomatoes and remaining 7 1/4 cups broth. Bring to a boil, reduce heat to medium-low and simmer, partially covered, 30 minutes or until lentils are almost tender. Uncover and cook 10 minutes longer. Stir in cilantro and serve.

Serves 8

Per serving : 120 calories (5 from fat), 0g total fat, 0g saturated fat, 0mg cholesterol, 180mg sodium, 21g total carbohydrate (7g dietary fiber, 6g sugar), 6g protein


The nutrition facts for the pot I made are going to be different because I didn't use the exact ingredients they suggest (regular chili powder as opposed to salt-free). But it's still nutritious. And I was surprised at how tasty it was. I was also surprised by how eager Jack was to gobble it up. It was a bit hot and he was not happy to have to wait for me to blow on each bite! I put a few of the tomatoes on his tray to occupy him and that seemed to do the trick. He made quite a mess!

This is an awesome dish. I make something similar that I call lentil curry... I love curry so I add in a LOT and I use the RoTel canned tomatoes with chilies (for a bit of spice). It's great with rice.

Now I want to make some! haha

We're definitely going to try this! Lentils are such a great source of protein and Asher hates meat, so I'm all about it. Wish us luck! :o)

This looks really good! Anne and I are both allergic to dairy, so I'll be adding this one to our recipe collection. I also like that it's vegan--I'm trying to work more meatless recipes into our dinner menus (despite protests from my husband!).
