I made these super easy, healthy, and delicious muffins last night.
Here's the recipe, which I found on Weelicious:
Mini Sweet Potato Muffins (Makes 30 Mini Muffins)
1 Cup All Purpose Flour
1 Cup Old Fashioned Oats
1/3 Cup Brown Sugar
1 Tsp Baking Powder
1/2 Tsp Baking Soda
1/2 Tsp Salt
1 Tsp Cinnamon
2 Large Eggs, whisked
1 Cup Sweet Potato Puree, cooked*
1/2 Cup Milk
1/4 Cup Canola or Vegetable Oil
1 Tsp Vanilla Extract
1 Cup Old Fashioned Oats
1/3 Cup Brown Sugar
1 Tsp Baking Powder
1/2 Tsp Baking Soda
1/2 Tsp Salt
1 Tsp Cinnamon
2 Large Eggs, whisked
1 Cup Sweet Potato Puree, cooked*
1/2 Cup Milk
1/4 Cup Canola or Vegetable Oil
1 Tsp Vanilla Extract
1. Preheat oven to 350 F.
2. Place the first 7 ingredients in a bowl and whisk to combine.
3. In a separate bowl whisk the remaining ingredients.
4. Slowly combine the dry ingredients with the wet ingredients just until they are combined (be careful not to over mix the batter).
5. Place 1 tbsp of batter in each cup of greased mini muffin tins and bake for 15 minutes.
6. Serve.

5. Place 1 tbsp of batter in each cup of greased mini muffin tins and bake for 15 minutes.
6. Serve.
* To make sweet potato puree, bake sweet potatoes (or yams) in a 400 degree oven for one hour, allow to cool, slice in half lengthwise and mash flesh with a fork until smooth.
** You can place muffins in labeled freezer bags and freeze for up to 3 months.
I sent a bag of them with Jack to share with his buddies today, and froze a second bag (only after eating 3 myself between last night and this morning!). If I ever need to bring something to a play date, potluck, or just want a quick snack, I'm glad to have this recipe to turn to. They're really easy and yummy! And healthy, which is a huge bonus. Plus the mini size makes them super adorable and completely toddler-friendly (and good portion control for those of us who need it!). What's not to love? :)
*Side note- does anyone know why, when I publish a post, it doesn't show up on other's pages until days later??? I think people are missing out on some of my posts because they just aren't showing up!

As for your posts... I am not sure. With my baby blog specifically, sometimes my posts don't even show up in my blog feed until HOURS after I post it! I didn't even see your last 2 on my blog feed either... I clicked through from your FB links. Not sure why. But with my other 2 blogs, my entries show up immediately on the blog feed... weird.
Those look delish!! I think I might have to make some soon.
Also, I don't know about the posts. I also hadn't seen the previous 2 posts until I just clicked on this one. I wonder if mine do that...I've never even thought to look!
Also, you rock with Jack's baby book!! I wish I had info for you, but I haven't been so great at the whole bab book thing. ;)
Christina made some of these last week and Ethan loved them! I haven't made them yet...but Im lazy lately. haha. I love Weelicious!
