Tasty Turkey Chili

I love chili and it's super easy to make. You don't even need to follow a recipe, just dump some beans, tomatoes, meat, and whatever else you like into a pot. Having said that, I do like to follow recipes when I cook and then tweak them to my liking. I found a turkey chili recipe sometime last year and it has been my go to recipe ever since. The original recipe was posted on Yahoo! from Better Homes and Garden.
Here is the recipe, including my additions:

Ingredients:
1-1/4 pound uncooked ground turkey
1/4 cup water
1 large onion, chopped
2 cloves garlic, minced
1 green pepper, chopped
1 15-ounce can tomato sauce
1 14.5-ounce can diced tomatoes, no salt added
 1 cup water
1 Tbsp. chili powder
1 tsp. ground cumin
1/2 tsp. sugar
1 15-ounce can pinto beans, rinsed and drained
1 15-ounce can kidney beans, rinsed and drained
1 cup frozen corn kernels
shredded cheese, if desired

Directions:
1. In a large saucepan, cook ground turkey until done; drain. Stir in the onion, green pepper, garlic, and the 1/4 cup water. Cook about 5 minutes more or until tender, stirring occasionally. Stir in the tomato sauce, undrained diced tomatoes, the 1 cup water, the chili powder, cumin, and sugar. Bring to boiling; reduce heat. Cover and simmer for 20 minutes, stirring occasionally.

2. Stir in the beans and corn. Return to boiling; reduce heat. Cover and simmer for 10 minutes more, stirring occasionally. To serve, ladle into bowls and sprinkle with cheese. Makes 6 main-dish servings.

I love a good crock pot recipe, but what I love about this dish is how quickly it cooks. If I chop the veggies beforehand, I can easily throw this together for a weeknight dinner which is exactly what I did the last time I made it.  Easy and delicious! Oh, and I'm not a fan of spice and when I first made this I was nervous about using a whole tablespoon of chili powder. Fear not, friends! It is not spicy at all, but amazingly delicious! Of course, if you do like spice, you can always add things to make it spicier. Just keep it away from me if you do. :-)
